Pork Chop Odds and Ends

Day 1: Pork Chops w/ Potatoes

Ingredients

  • 1 1/2 piece Pork Loin Slice
  • 1 1/2 piece Potato
  • 1/2 piece Onion
  • 1/2 piece Bell Pepper
  • 1 1/2 tbsp Flour
  • 1 1/2 tsp Corn Starch
  • 3/4 tsp Black Pepper
  • 3/4 tsp Salt
  • 3/4 tsp Garlic Powder
  • 4 1/2 tbsp Oil

Directions

  1. Dice onions, pepper, and potatoes.
  2. Mix the dry ingredients in a bowl to form a dry batter.
  3. Pat the pork loin slice dry and dust with flour.
  4. In a skillet, pan fry the pork loin on medium high heat in oil.
  5. Allow to rest. While resting, chop potatoes and begin frying.
  6. When onions are beginning to crust, add peppers and onions.
  7. Salt and pepper to taste and stir fry.

Set Aside

  • 1/2 servings Cooked Pork Chops

Day 2: Pork and Potato Tacos

Ingredients

  • 1/2 servings Cooked Pork Chops
  • 1 tsp Taco Seasoning
  • 3 piece Tortillas
  • 2 tbsp Salsa

Optional Ingredients

  • 1/8 can Corn
  • 1/8 can Black Beans

Directions

  1. Dice the leftover pork chops.
  2. Toss in skillet with taco seasoning and a splash of oil on medium heat.
  3. Add salsa and any optional ingredients.
  4. Serve on tortillas.

Day 3: Honey Garlic Pork Chops on Rice

Ingredients

  • 1 tbsp Butter
  • 3 clove Garlic
  • 3 tbsp Chicken Stock
  • 3 tbsp Honey
  • 1 tbsp Apple Cider Vinegar
  • 12 tbsp Rice
  • 3 piece Pork Loin Slice

Directions

  1. Steam rice.
  2. Mince garlic and simmer in butter on medium-low heat.
  3. Add chicken stock, honey, and vinegar and bring to simmer.
  4. Add in pork loin slices and simmer until cooked through and sauce becomes sticky.
  5. Serve on rice.

Set Aside

  • 1 servings Honey Garlic Pork
  • 1 servings Cooked Rice

Day 4: Honey Garlic Pork Fried Rice

Ingredients

  • 1 servings Honey Garlic Pork
  • 1/2 piece Carrot
  • 8 tbsp Peas
  • 1/4 piece Onion
  • 4 tbsp Chicken Stock
  • 2 piece Egg
  • 2 tsp Sesame Oil
  • 2 tsp Salt
  • 4 tbsp Soy Sauce
  • 1 servings Cooked Rice

Directions

  1. Dice carrot, onion, and leftover honey garlic pork chops.
  2. Whisk egg, sesame oil, and salt in a mixing bowl.
  3. In a hot wok with a generous amount of oil, stir in egg and mix until almost cooked.
  4. Return egg to bowl and wipe wok clean.
  5. Add more oil and begin stir frying carrot, onion, and peas.
  6. Once onions begin to turn translucent, add pork and leftover rice.
  7. Break up leftover rice, then add soy sauce and chicken stock.
  8. Add more oil as needed and stir fry until fried rice is done.

Set Aside

  • 1 servings Pork Fried Rice

Day 5: Honey Garlic Pork Stuffed Peppers

Ingredients

  • 1 servings Pork Fried Rice
  • 1 piece Bell Pepper
  • 1 piece Egg

Directions

  1. Preheat oven to 350.
  2. Remove core from peppers; stuff with leftover fried rice.
  3. Bake for 30 minutes.
  4. Remove from oven and crack an egg into the top opening.
  5. Bake for an additional 10 minutes to cook the egg.
